Strawberry Coconut Trifle Pudding

Ingredients :

pound cake - 1 cut into cubes (lemon or vanilla flavoured) 

Coconut milk - 180 ml

Corn flour - 2 tablespoon

sugar - 1/2 cup

strawberries - 200 gms (quartered)

Walnuts - a handful (roasted)

* any other nuts of your choice

Method :

Firstly, we prepre the coconut milk custard. 




In a sauce pan, add sugar, coconut milk, corn flour, 1/2 cup of water and stir well over medium heat. Keep stirring until it forms a thick custard.








 Keep it aside and let it cool completely.

 Cut the pound cake in to cubes.
The final step is to assemble the trifle pudding.



Take small glasses, place a few pound cake pieces, spoon the pudding custard, a few strawberries and nuts/walnuts. 





Make two layers and cool it in the fridge for at least 6 hrs. 




Serve chilled.
