Potato Rice

Ingredients :


Basmati Rice - 1 cup (Cooked) 

Potato - 1 medium sized (Diced)

Cumin Seeds - 1/2 teaspoon

Cashew nuts (optional) - 5 to 6

Turmeric powder - 1/2 teaspoon

Sambhar powder - 1and 1/2 teaspoon

Asafoetida (hing) - a pinch

Salt - to taste

Cilantro (dhaniya) - chopped



Method :

In a pan, heat oil and add cumin seeds and cashew nuts and saute for 2 minutes. Add the diced potatoes, salt , turmeric powder, asafoetida and sambhar powder and cook till the potatoes turn golden brown. Add in the cooked basmati rice and mix well. Garnish with chopped cilantro. Serve hot with a plain raita.


Raita :

Yogurt - 1 cup

Cumin powder - 1 teaspoon

Red chilly powder - 1 /2 teaspoon

Salt - to taste


Method :

Whisk the yougurt and add in all the ingredients and mix well.
