Pasta Upma











Pasta is a type of food typically made from an unleavened dough of wheat flour mixed with water or eggs and formed into sheets or other shapes, then cooked by boiling or baking. Normally we would make a pasta dish by adding either white sauce, red sauce or pesto pasta or even the pink sauce and load it with grated cheese and then bake it.

This pasta upma  is a fusion recipe fusing my love for south indian upma and the italian pasta. You could use any type of pasta- I have used the penne type as it is my favourite. This pasta upma is easy to make and makes a filling breakfast or an evening tiffin . Try this recipe and see how it becomes one of the favourite breakfast recipes at your home too. 







Ingredients :


1 cup cooked pasta

1 sliced onion

1 sliced capsicum 

1 carrot cut lengthwise

2 green chillies slit

1/2 cup grated coconut

Salt 

for tempering :

1 teaspoon mustard seeds

1 teaspoon urad dal (split black gram)

1 teaspoon chana dal (Benagal gram)

1 sprig curry leaf

2 teaspoon oil



Method:

1. Boil pasta in salted water for 7 minutes or till it is cooked. Strain and pour cold water over it and drain completely. Keep it aside.

2. Heat oil in a pan and add the ingredients of tempering one by one. When the dals turn brown add onion and saute.

3. Add capsicum, carrot ,salt and saute for 2 minutes or till the vegetables are done.

4. Now add the cooked pasta and toss well. Mix in the grated coconut and switch off the flame.

5. Serve hot with coconut chutney.
