Ingredients :
Carrot - 1 cup chopped
Onion - 1/2 chopped
Zest of orange - few strands
Orange juice - 1/2 cup
Salt - to taste
Pepper - to taste
Fresh cream (optional) - for garnish
Method :
Heat oil in a pan. Add onions and saute till they are translucent. Add carrots and saute for few minutes or till the carrots are soft. Add salt and orange zest and mix. Add little water and cover and cook it for few minutes. Once it is cool blend it in a mixer into a puree and transfer it into the same pan. Add orange juice and let it cook for a minute on a low flame. Transfer into a serving bowl and garnish it with some fresh cream and black pepper. Serve hot.
