Ingredients :
Pasta - 1 cup cooked
Pesto sauce - 1 cup
Onion - 1 chopped
Bell peppers (all colours) - 1 cup diced
Carrot - 1 diced or chopped
Mushroom - 1/2 cup sliced
Broccoli - few florets
Apple - 1/2 diced
Grapes (green) - few
Butter - 1 tablespoon
Cheese - 1 tablespoon
Pomegranate pearls - for garnish
Method :
Fill a large pan with salted water, place on a high heat and bring to the boil. Meanwhile, make pesto sauce. In a blender, add a bunch of basil leaves, 2 cloves of garlic, 1/4 cup of pine nuts, 3 tablespoons of olive oil, salt, pepper and cheese. Blend it to a smooth paste.
In another pan add butter and saute onions till they are soft. Add carrot, bell peppers, mushroom, broccoli and saute further till they are done. Once the pasta is cooked, drain and keep it aside. Add the pesto sauce to the pan and mix well with the veggies. Add salt if required. Time to add the apple and the grapes. Spread some cheese and stir well. When the cheese melts switch off the flame and serve hot. Garnish with pomegranate pearls.
