Ingredients :
For the Fried Rice :
Basmati rice or any long grain rice 1 cup
Onion finely chopped 1
Carrot finely chopped 1
Green Capsicum finely chopped 1
Cabbage finely chopped 1/2 cup
Spring onion for garnish
Soy sauce - 1 tablespoon
Vinegar - 1/2 tablespoon
Black Pepper powder 1/2 teaspoon
Oil 1 tablespoon
Salt to taste
Method :
Boil rice and make sure the grains are separate and not sticking to each other. Heat a pan, add oil. Once the oil is hot add onions, capsicum, carrot and cabbage. fry them well till the vegetables are soft but still crisp. Do not overcook the vegetables. Always keep the flame on high while preparing Chinese dishes. Add salt, soy sauce, black pepper powder and mix well. Switch off the flame and transfer this into a serving dish. Garnish with spring onion.

For Mushroom Manchurian
Button Mushrooms 1 cup
Onion finely chopped 1
Garlic 4 cloves finely chopped
Ginger 1 inch finely chopped
Green capsicum diced 1
Green chillies finely chopped 2
Corn flour 2 tablespoon
Plain flour/ Maida 1 tablespoon
Soy sauce 1 teaspoon
Vinegar - 1/2 teaspoon
Red chilly sauce - 1 tablespoon
Tomato ketchup - 1/2 cup
Black pepper powder 1 teaspoon
Sugar 1/4 teaspoon
Salt to taste
Oil
Method:
In a bowl add 1 tablespoon corn flour, plain flour, salt and black pepper powder and mix well. Now add in washed mushrooms (cut into halves) and mix well till all the pieces of mushrooms are coated well with the flour. Heat oil in a kadai and deep fry the mushrooms till they are golden brown from both sides.
Heat oil in a pan, add garlic, ginger and green chillies and saute them well. Add in onions, capsicum and fry them well. Add tomato ketchup, soy sauce, red chilly sauce, vinegar, salt, sugar, black pepper powder and stir well. In a small bowl take a teaspoon of corn flour and add water. Pour this into the pan and stir well. At this stage the gravy will have a beautiful glaze and will thicken up. You can add more water and let it boil till you get the right consistency. Switch off the flame and garnish with finely chopped spring onion.
