Idiyappam and vegetable stew




     Idiyappam and Vegetable stew

Ingredients for idiyappam:

Water - 2 Cups
Oil - 1 tsp + more as needed
Rice flour | Idiyappam flour - 1 1/2 Cups
Salt to taste


Method:

First, add the oil to the water and bring it to a boil. Once the water starts to boil, turn off the flame.
In a separate bowl, add the rice flour, salt and mix well. Add about 3/4 Cup of the hot water to the rice flour. Stir with a spatula. Now, continue to add the water little by little to the rice flour and mix well until a soft, smooth and non-sticky dough is formed. Knead it nicely for 1-2 mins. Grease the inside portion of the idiyappam press. Grease your palm with oil, take a portion of the dough, smoothed it out in your palm and fill it in the press. Similarly, grease the steamer plate. Gently press the idiyappam dough onto the steamer plate.
Steam the idiyappam for about 5 mins, until cooked through. Let the idiyappam  cool down a bit, before gently removing from the steamer plate and transferring to a serving plate.
Enjoy hot with vegetable stew.


Ingredients for vegetable stew:

Carrot - 1 cup (diced)

French beans - 1 cup

Cauliflower - few florets

Potatoes - 1 cup (cut in cubes)

Green peas - 1/2 cup

Onion - 1 cup (sliced)

Ginger - 1 inch

Green chillies - 1 

Coconut Milk - 1 1/2 cups

Coconut oil - 1 tablespoon

Red chilly powder - 1 1/2 teaspoon

Coriander powder - 1 teaspoon

Black Peppercorns - few

Curry leaves - few 

Method:

Heat oil in a pan and add onions. Saute till they are translucent. Add the green chillies, curry leaves and crushed ginger and stir well. Now add all the vegetables mentioned above along with salt, red chilly powder and coriander powder. Cover it and let the vegetables cook on a medium flame till they are cooked but still firm. do not overcook them. Once done, add the coconut milk and let it boil. Add water if required only to get the desired consistency. Add crushed peppercorns and stir well. Switch of the gas and drizzle coconut oil as garnish. Enjoy with idiyappam, appam or dosa.
