Coconut Mango pudding















Ingredients:

1 can Coconut milk

1/4 cup Coconut milk powder

Sugar - 1/2 cup

1 fresh mango cubed

Assorted nuts for garnish


Method :

In a bowl, mix together the coconut milk and the coconut milk powder. Pour the mixture into a saucepan and cook it on medium heat. Stir regularly to prevent sticking. When reduced to about one third of it's original volume, add the sugar and reduce further while the sugar dissolves. Transfer to a bowl or individual cups or glasses in which you will be serving and let it cool. Once cool refrigerate. Just before serving garnish it with mango cubes or mango custard (as in the pic). Chikki or coconut chips can also be used for garnish.



Note:

* mango custard : 1 cup mango puree,  4 Teaspoon Gelatin powder, Sugar (optional)

Dissolve gelatin powder in water and add it to the mango puree. Once the coconut pudding is set pour this mango puree over it and keep it in the fridge again for minimum 1 hour. Before serving garnish with nuts or coconut chips or chopped mangoes. You can also set this dessert in layers.
