Sabudana - 1 cup
Potato - 1 half boiled
Peanuts - 1 cup
Green chillies - 2 finely chopped
Curry leaves - few
Sugar - 1 Teaspoon
Juice of 1/2 lemon
Cumin seeds - 1/2 Teaspoon
Coriander leaves - for garnish
Oil - 1 Tablespoon
Salt - to taste
Method :
Rinse sabudana under water until the water turns clear. Now soak the sabudana in water for 6 hours or overnight. Drain the excess water using a colander and keep it aside. Heat oil in a pan, add cumin seeds, raw peanuts, curry leaves, green chillies and the half boiled and diced potatoes. Cook till the potatoes turn golden brown. Crush the peanuts in a blender to a coarse powder. If using raw peanuts then dry roast them for a minute and then powder them. Add Sugar, salt and the powdered peanuts and give it a good stir. Cook for a few minutes until the sabudana becomes translucent, stirring once or twice in between. Remove pan from the heat and add lime juice and coriander leaves . Toss to combine well. Serve hot.
