Ingredients:
For the dough:
Wheat Flour - 1 cup
salt - to taste
water - as required
For the stuffing:
Cabbage - shredded
Carrot - 1 grated
Green peas - boiled or frozen
French beans - few finely chopped
Ginger - grated
Garlic -grated
Black pepper powder - as per taste
Mixed herbs - 1 tablespoon
Salt - to taste
Oil - 1 Teaspoon
For the marination:
Yogurt - 1 cup
Red chilly powder (Kashmiri) - 2 Teaspoon
Coriander Powder - 1 Teaspoon
Cumin powder - 1 Teaspoon
Amchur powder - 1/2 Teaspoon
Anardana Powder - little
Kasoori Methi - few
Garam masala powder - 1 Teaspoon
Ginger - Garlic paste - 1 Teaspoon
Salt - to taste
Black salt - a pinch
Oil - for frying
Method :
Knead a tight dough out of Wheat flour, salt and water and let it rest for 10 mins minimum.
Heat oil in a pan, add ginger and garlic paste and saute for few seconds. Add all the vegetables one by one and stir well. Add salt
and cook it till the vegetables are soft and cooked. Sprinkle mixed herbs and black pepper powder and keep it aside and let it cool.
Knead the dough again and pinch out small lemon sized balls and roll out each ball into a circle. It shouldn't be too thick or too thin. Place the stuffing in the centre and seal it well by gathering the edges to form pleats.
Place the prepared momos in the air fryer and fry them till they turn in to golden brown (200°C for 9 to 12 minutes).
In a bowl prepare the marinade with yogurt, salt, redchilly powder, coriander powder, jeera powder, kasoori methi, amchur powder, garam masala powder, turmeric powder, ginger garlic paste and mix well. Coat the prepared momos in the marinade nicely.You can also add onion, tomatoes and capsicum in the marinade. Place the onion, tomatoes, capsicum and momos in a skewer and place them in the air fryer. Fry them and enjoy the beautiful tandoori momos( they get ready in 3 minutes @200°C if the air fryer is hot). Alternatively you can grill the momos till they get a golden brown colour. Serve it with chutney of your choice.
