Ingredients :
2 Boiled eggs
2 sliced onions
1 sliced tomato
2 Green chillies
1 Tablespoon ginger
1 cup coconut milk
Few curry leaves
1 Teaspoon Red chilly powder
1/2 Tsp Coriander powder
1 Tablespoon coconut oil
Salt to taste
1/4 Teaspoon black pepper powder
Method :
Place eggs in a pot and cover them completely with water. Add salt to it; Once the water starts to boil, turn off the flame and let it sit for 10 minutes. Drain the water, peel and keep it aside.
Heat oil in a pan and add the onions, ginger, chillies and little salt and fry the onions till they are golden brown in color. Add in the tomatoes, red chilly powder, turmeric powder, coriander powder and give it a good stir. Cover and cook on a low flame till the tomatoes are soft and the gravy is mushy. Now add in the coconut milk and add water if needed to get the desired consistency. Place the eggs gently and let it boil well. Lastly, add the black pepper powder. Serve hot. Best eaten with Appam.
