Sticky date pudding with butterscotch sauce

Ingredients :


1 cup pitted dates, roughly chopped

1 tsp baking soda

1 cup boiling water

6  Tbsp unsalted butter, softened

2 eggs

1 1/4 cup Plain flour

1 1/2 baking powder



For butterscotch sauce:


5 tbsp unsalted butter, softened

1 1/2  cup thickened cream

1/2 tsp vanilla extract

1 cup  brown sugar




Method :

Preheat oven to 180 C.  In a bowl, place the chopped dates add the baking soda and pour boiling water. Let it stand for 10 minutes and mash the dates. 

Place butter and sugar in a bowl and beat until smooth. Add eggs and beat till incorporated. Add flour, baking powder and mix till the flour is incorporated well. Add dates and mix well. Pour in to a greased cake pan or greased individual moulds and bake them for 30 minutes depending on your oven. Insert a skewer in the center of the cake. if it comes out clean the cake is done. While still hot, poke all over the cake using a skewer or toothpick and pour the butterscotch sauce all over the cake. Leave it for 10 minutes. Cut, serve warm with some more sauce and/or ice cream.


Butterscotch sauce:

Place the butter, heavy cream vanilla extract and the sugar in a saucepan on medium heat. Once the butter is melted, stir and simmer for 5 more minutes , stirring occasionally. Remove from heat and serve warm.
