Rooh Afza Thandai Kulfi




 


Ingredients :


Milk 1 litre

Rooh afza Syrup 4 - 5 Tablespoon

Thandai powder - 1Tablespoon (recipe below)

Pistachios 1 Teaspoon

Cardamom powder 1 Teaspoon


Method:

Boil milk, stir occasionally, when the milk reduces to half, add thandai powder, cardamom powder , crushed pistachios and keep stirring. Don't forget to scrape the sides of the pan and when the milk reduces to 1/3rd, switch off the flame and let it cool completely. Once cool, add rooh afza syrup and mix well. Fill in the kulfi moulds and cover with foil nd insert a stick and deep freeze for 6 hours.


Thandai Powder 


Ingredients :


Almonds  1/2 cup

Dry rose petals 2  tablespoon

Cashews 1/3 cup

Pistachios 1/4 cup

Melon seeds 2 tablespoon

Fennel seeds 2 Tablespoon

Poppy Seeds 2 Tablespoon

Saffron 1/4 Teaspoon

Cardamom pods 10 -12

Black peppercorn 1 tsp

Method:

In a blender , blend all the above ingredients to a fine powder. Store and use.
