Manga kari Instant mango pickle



In India, pickles are relished with different dishes be it parathas, dal- rice, dosas , a humble curd rice or a full fledged kerala sadhya. In fact, minimum 3 different varities of pickles are served in a typical kerala sadhya. Pickles are traditionally prepared with mangoes, lime, gooseberry etc. with some spices and oil. Mango pickles itself are of many kinds and one such mango pickle that I'm sharing today is the kerala style instant mango pickle or the manga kari. Very simple to make and hard to resist !

Ingredients:


Raw green mango 1 big 

Salt to taste

Red chilli powder Kashmiri 1 Tablespoon

Spicy red chilly powder 1 tablespoon

Sesame oil 1 tablespoon

Mustard seeds 1 tablespoon

Fenugreek (Methi) seeds or powder 1 teaspoon

Asafoetida 1 teaspoon



Method:

Rinse the mango well and dry them with a clean kitchen towel. Chop them into small sized pieces or cubes. Place them in a bowl and add turmeric powder, salt and red chilly powder on the cubes. Mix well. The masalas should nicely coat the cubes. For tempering heat 4 tablespoons of oil and when hot add mustard seeds, fenugreek seeds and asafoetida. When they crackle switch off the flame and pour this tempering over the masala coated raw mangoes. Mix well and allow it to cool. Transfer it to a sterlized glass bottle and store.
