Aamrakhand (Mango Shrikhand)

 



Shrikhand is a creamy, delicious and one of the simplest desserts to make. Made with thick yogurt and flavored with sugar, cardamom, saffron and nuts. The most famous variation is the mango shrikhand also known as Aamrakhand which is a staple during the summers. Traditionally, it is made with hung curd and then mango puree with suagr, cardamom and saffrron are added for flavor. I like my mango shrikhand to keep it healthy so I avoid using sugar and instead add honey. Believe me, it tastes just as better and you don't feel guilty at all.

Ingredients :


1 cup hung curd

2 tbspn Honey

1 tsp Cardamom powder

Few strands of Saffron

1 tbspn assorted Nuts (almonds, Pistachios)

Rose petals



Method:


To make the hung yogurt line a mesh strainer with muslin cloth and set it atop a large bowl to allow drainage. Pour the fresh yogurt (make sure the yogurt isn't too sour). Bring the four ends of the muslin cloth together and tie it tightly in the center. Gently press it and you can see the whey dripping. Now weigh down the tied muslin cloth with a heavy object and allow it to drain for at least 2 hours. Whey is rich in nutrients and hence it can be used in your everyday cooking like preparing rotis or gravies etc. The texture of the hung curd will be creamy and smooth and  will be similar to cream cheese.

Now that the hung yogurt is ready. shrikhand can be made in no time!

Add all the other ingredients mentioned above in the hung yogurt and give it a good stir. Chill the shrikhand in the fridge for at least an hour. Before serving top it with sliced almonds and pistachios and garnish with rose petals. Serve chilled.
