Curd rice

 




A quintessential comfort food, curd rice is one of the most popular all season south Indian favorite food. It's simple, healthy and liked by everyone. In fact, many south Indians prefer to end their meal with a serving of curd rice every day. Its an emotion for many which cannot be expressed in words but if I have to describe it in one word - it's my go to comfort food!  Specially during the summers here in the UAE. The best way to keep your body cool is to gorge on a yummy bowl of this curd rice.

It's a simple recipe that is made with rice (leftover rice just works fine too), yogurt and some basic tempering. It is a meal by itself and hence doesn't need any side dish in particular. However, fried curd chillies or a tantalizing tempering on top just does the trick. Pair it with a pickle of your choice and you will feel satisfied with just a couple of spoons. That's the beauty of this simple dish.

Serves : 4


Ingredients :


1 cup Rice

2 1/2 cups Water

1 cup Yogurt

1 teaspoon Ginger

3 Green Chillies

Salt

Coriander leaves

Pomegranate seeds


For tempering:

1 tablespoon Oil

1 teaspoon Mustard seeds

3 Dry Red Chillies

Few Raisins



Method :

Cook rice like you would normally do. You can either pressure cook it for 1 whistle or keep it directly on the stove and drain the water once it's cooked and let it cool completely. 

Add yogurt, salt, ginger and green chillies to the rice and mix well. If the yogurt is too sour then add little milk. 

Prepare the tempering and pour it over the curd rice. Mix well and garnish it with coriander leaves and pomegranate seeds. Serve chilled.
