garlic chutney for vada pav



Vada pav is incomplete without this garlic chutney. This chutney is sprinkled in the filling of vada pav and just elevates the taste to another level. The flavors of  coconut and garlic is felt distictly in this chutney and the heat comes from the red chillies. There are many variations of making this chutney where a few spices like coriander and cumin are also added. Some recipes use peanuts as well.


Ingredients :

20 Pods of garlic

1 tsp Peanut

1/2 cup dry coconut

1 tbspn Kashmiri chilli powder

2 tsp White sesame seeds

1 tsp Oil

Salt



Method:


Heat oil in small kadai at a low flame. when the oil is hot add garlic cloves and sauté for 40 seconds. Next add peanuts and sauté for a minute, Add sesame seeds and sauté till sesame seeds change color. Switch off the flame and add dry coconut and mix well. Add red chilly powder, salt and let the mixture cool down. Grind them in to a semi fine powder. Transfer it to a air tight container and use it accordingly.
