Shahi Tukra






Shahi Tukra, a popular Hyderabadi special dessert is a royal treat to taste buds at anytime. To make this sweet in authentic style, bread pieces are deep fried in ghee until crispy and then dunked in saffron flavor sugar syrup followed by topping it with lustrous rabdi or milk cream. A simple and easy to make desserts that you must try! In this recipe, the bread slices are fried as they are healthier than the deep fried version.

Serves :4


Ingredients :

4 slices Bread

1 teaspoon Ghee

3/4 cup sugar

1 cup water

few strands of saffron


For Rabdi :

1 1/2 cups milk

1 cup Sugar

few strands of Saffron

Almonds

1/2 teaspoon Cardamom powder

Pistachios and Rose petals for garnish


Method :

In a thick bottomed pan add milk, sugar and saffron and bring it to a boil on medium flame. When it starts boiling, reduce flame to low and boil it until the mixture turns thick and reduces to half the quantity. This will easily take 10 - 15 minutes. Stir occasionally in between to prevent sticking. Once done add cardamom powder and mix well. Switch off the flame and let the rabdi cool at room temperature.

Remove the sides of the bread slices and cut each slice into triangles. Brush little ghee on both sides of the bread triangles and air fry them till they are crisp and brown from both sides. while the bread is air fried prepare the sugar syrup. In a saucepan add 1 cup of water and 3/4 cup of sugar. When the water starts to boil and the sugar starts to dissolve add saffron and let the water boil for 5 - 7 minutes. Switch off the flame and let it cool. Dip each fried bread slice into the syrup and take it out and keep them aside. 

Arrange the bread slices in a layer on a serving dish. Pour the rabdi over it. Garnish with pistachios, almonds and rose petals.
