Breakfast blues! I am sure I am not the only one who faces it. The constant effort of making something new and delicious yet which is simple to make can be exhausting and challenging but this variation of upma surely ticks all the boxes and not to forget it's healthy! One pasta dish without cheese. Isn't that amazing!
One of the most common Indian breakfast, Upma is a savory porridge usually made with semolina and veggies. But if you are tired of having the same upma and you and your family finds it boring then you should try making this pasta upma. It makes a filling and satisfying meal, especially with a side of chai or filter coffee! Pasta upma tastes best with coconut chutney.

Serves : 4
Ingredients :
1 cup boiled Pasta
1 carrot
1 green capsicum
1 Onion
2 Green chilies
1/2 cup grated coconut
Few curry leaves
1 teaspoon Mustard seeds
1 teaspoon Chana dal
1 teaspoon Urad dal
2 tablespoon oil
Salt
Method:
1. Cook pasta in a large pot of salted boiling water. When pasta is ready, drain the water completely.
2. In a kadhai heat oil, add mustard seeds and when they crackle add chana dal and urad dal and fry them till they are brown in color. Add curry leaves, slit green chilies and fry them for a minute.
3. Now add sliced onions and sauté them till they are translucent. Add carrot and capsicum and sauté till they are soft but still crunchy. Add salt, turmeric powder and give it a good stir.
4. Finally add grated coconut and mix it so that it coats well with the pasta and the vegetables.
5. Switch off the flame and serve it hot with coconut chutney.
