Chocolate Fudge cake

 Ingredients :


1 cup softened  unsalted butter

1 1/2 cup castor sugar

3 large eggs

2 cups plain flour

3/4 cup cocoa powder

1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons Vanilla extract

pinch of salt

1/2 cup hot water



Method :

Grease 8 inch cake tin with butter and line the bottom with baking paper. Preheat oven to 180C.

In a large mixing bowl, add butter and sugar and beat with an electric mixer until pale and creamy. Add vanilla extract and eggs, one at a time and continue beating until mixture is combined and creamy. Add hot water and set aside.

In a separate bowl sift the flour, cocoa powder, baking powder, baking soda and salt and whisk lightly.

Add the dry ingredients to the wet and gently fold it with a spatula until the mixture is combined and smooth.

Pour the batter into the cake tin and bake it for 40 - 45 mins or until a skewer inserted in the middle of the cake comes out clean. Switch off the oven and let it cool completely.
