Carrot Ginger Lemongrass soup






Winter is the perfect soup season for good reason - few things are better on a cold day and coming home to a warm pot of soup. Eating soup is a way to hit the body's reset button, to allow internal organs devoted to detoxification the rest and nutrients necessary to successfully do their job. The heat of the pot slowly breaks down nutrients to a more digestible state, simultaneously releasing outrageous flavors that create aromas that magnetically draw us to the broth.

This vibrant soup blends carrots with onion, lemongrass, ginger and garlic.

Prep Time : 10 Mins.

Cooking Time : 10 - 12 mins.





Ingredients :


3 Carrots, roughly chopped

1 Onion, roughly chopped

2 inch Ginger

2 cloves of Garlic

3 stalks Lemongrass

1 tbsp Oil

1/4 tsp Turmeric powder

1/2 tsp Crushed black pepper powder

Roasted Peanuts for garnish

Coriander leaves

Salt 


Method :

1. In a saucepan heat oil, add onion and fry it till they are translucent.

2. Add ginger , lemongrass, the carrots, turmeric powder, salt , mix , cover and cook on low flame for 6 to 8 minutes or until the carrots are soft.

3. Once done, switch off the flame, let it cool completely. Blend them until smooth and creamy. 

4. Pour it into a serving bowl and garnish with coriander leaves, white sesame seeds and roasted peanuts.
