Aam Panna

Aam panna is an Indian drink renowned for it's cooling properties. It is made from unripe mangoes and is consumed to fight against the intense summer heat.

Drinking Aam panna is great for your immune system as it aids in digestion. It's rich in Carbohydrates and Vitamins - A, B1, B2 and C. It also provides minerals such as Potassium, Sodium, Magnesium, Iron and Calcium.

As with most Indian recipes, there's more than one way to make Aam panna. My recipe is obviously a simple one😀 To make it more healthy, i have added Jaggery instead of sugar. You could use any sweetner of your choice.

Prep time : 10 minutes

Cooking Time : 8 minutes

Serves : 12

Ingredients :

2 unripe Mangoes

2 cups Water

1.5 cups Jaggery

1 teaspoon Cardamom powder

1 teaspoon Roasted Cumin powder

1/4 teaspoon Black pepper powder

2 teaspoons Black salt

Method :

1. Rinse rw, unripe mangoes in water. Pressure cook the mangoes for 2 whistles by adding 2 cups of water.

2. When the pressure settles down, remove the mangoes and let them cool in room temperature.

3. With a sharp edge spoon or knife scrape the cooked mango pulp into a bowl. Scrape the peel also and discard the skin of the mangoes.

4. The ratio for the mango pulp and the sweetner is 1: 2 respectively, So measure the mango pulp and add the sweetner (sugar or jaggery) accordingly. I have used jaggery here for this recipe.

5. Add the cardamom powder, roasted cumin powder, black salt, crushed black pepper and mix well.

6. Your Aam panna concentrate is ready. Pour it in a glass jar or container and store it in the fridge.
