For Vada :
3 Potatoes
Few Curry leaves
Few Coriander leaves
1 tbspn Garlic and green chilli paste
1 tsp Mustard seeds
Oil for frying
Salt
1 cup Gram flour (Besan)
Am pinch of Asafoetida
1 tsp Red chilli powder
1/2 tsp Turmeric powder
Method :
Boil potatoes with salt and turmeric powder till soft and mash them well. Heat oil in a pan and add mustard seeds. When they crackle add curry leaves, garlic and chilli paste and fry them for a minute or till the raw smell goes off. Add turmeric powder and the mashed potatoes. Give it a good mix. Check for the seasoning. If salt is required you can add it and add finely chopped coriander leaves. Switch off the flame and let it cool and shape them into balls.
In a mixing bowl add gram flour, salt, asafoetida, turmeric and chilli powder. Mix everything well and add water little by little and make a slightly thick batter. Do not make the batter runny as the covering will will turn very thin.
Heat oil in a medium flame. When the oil is hot enough, drop a potato ball in the batter and coat it well. Gently drop it in hot oil and do not stir it immediately. let it cook for a minute and then turn them over. Fry them till they are golden in color from all sides. Drain and keep them aside.
In the same oil add deseeded green chillies and fry them for a minute. Drain and keep it aside.
Assembling the vada pav
Slit a pav keeping one end intact. Apply the green chutney, very little sweet chutney and sprinkle some dry garlic chutney on both sides. Flatten the fried vada and place it in the center. Enjoy it with fried chillies. Once you assemble, make sure you consume it immediately.
